We recently took a trip through the central valley which is rich with agricultural fields. It’s such a wonderful sight to see how the foods we eat is seeded, cultivated and harvested.

Eating foods that are locally grown and harvested is something that we all should start doing, not only with fruits and veggies, but with our meats too. Foster Farms is delivered fresh from local ranches in 48 hours of less. Some chicken brands are trucked from across the country, which could take up to a week to reach the West Coast. I went shopping today and picked up Foster Farms Simply Raised (without antibiotics) chicken for one of my favorite lunches:

Easy Chicken Mole Salad made with Foster Farms Chicken

Ingredients:

1 package of Simply Raised Foster Farms Chicken Breasts

2 tbsp EVOO

1 pack of your favorite salad

1 can of black beans

1 can of southwest corn

1 small box of your favorite mole sauce

Salt and pepper to taste

Your favorite salsa

Directions:

Slice the chicken breasts into 1 inch squares and cook over medium heat with the EVOO.

Saute the chicken for about 10-15 mins. We don’t want to see any pink in the chicken. Add salt and pepper to taste. Once the chicken is cooked thoroughly, add the mole sauce.

Reduce your heat and make sure the chicken is coated evenly with the mole. Cook for an additional 5 mins, then turn off the heat and over your chicken. Next, drain your corn and beans and set aside.

Now it’s off to plate! First add your salad and top with the chicken mole, the beans, the corn and the salsa. Serve immediately and enjoy!
