Pairing your favorite wine to foods is also something that one has to accomplish.  Other than pasta, my favorite meal to pair with wine, is pizza! No, not your average pizza, but a delicious, homemade pizza. I went to Grocery Outlet to shop for ingredients to make a pizza and pair it with a sweet rosé wine. I love that I can one-stop shop for a meal at one store. It’s the simple convenience of finding what I need, where I need, all in one store. I love it!

Grocery Outlet Spring Wine Sale and Veggie Pizza Recipe

Ingredients:

  • 1 frozen pre-made pizza dough
  • 4 tablespoons olive oil, divided
  • 1/3 cup fresh basil
  • 1 zucchini, thinly sliced
  • 1 yellow summer squash, thinly sliced
  • 1 cup of frozen corn
  • salt and pepper, to taste
  • 1 tablespoon of oregano flakes
  • 1 package of provolone cheese, sliced
  • 1 cup mozzarella cheese
  • fresh basil, for garnish
  • Red pepper flakes to taste

Directions:

Preheat oven to 375. Thaw your pre-made pizza dough and brush a (2 tbsps) coating of olive oil.  Place the slices of provolone cheese on the dough and top with the grated mozzarella cheese. Next, arrange the zucchini and squash so that when the pizza is sliced, there will be zucchini and squash on each slice. Add the corn. Add the fresh basil. Next, sprinkle the red pepper flakes and drizzle the remainder olive oil. Sprinkle with salt and pepper to taste.

Bake at 375 for 20-5 min or until the cheese is melted and the crust is a golden brown. Remove from heat, slice and serve immediately.  Oh, this pizza and the rosé wine was the perfect match. The pizza slices can be cut traditionally or any other way, if you plan to make the pizza as an appetizer. Either way, it’s going to go fast.

All of the ingredients were bought at my local Grocery Outlet. Nice, I know! I’m so lucky to have one close by. The wine sale will start on Tuesday, March 22 and end on Saturday, March 26 and it’s happening at all Grocery Outlet locations. How perfect is the timing of the sale? Just in time to stock up for your Easter lunch or dinner.
