Cranberry Pecan Bacon Salad


When the weather starts to warm up, it’s the perfect time to head outside and fire up the grill. When spring comes around, we always find ourselves having dinner or desserts in the backyard. I mean, how could you not? In California, during this time of the year, our days are warm and the nights are cool, still this calls for outdoor activities that will please the whole familia.

Along with our spring wardrobe, our meals tend to change too. Out with the soups and hearty meals and in with delicious salads and fresh sandwiches and fun hot dogs. I love springtime, don’t you?

Cranberry Pecan Bacon Salad

Farmer John recently sent us some of their famous bacon for us to cook up. I wanted to share something fresh with all of you. After all, anything with bacon is always much better. Even wrapping a hot dog with bacon makes a simple meal fabulous! Bacon. Oooooh, my mouth watered! HA!!

And with that thought, I want to share with you a recipe that is my absolute favorite, and with sliced Farmer John bacon bits, oh man, this salad is the best. I can make this night after night. I’m sure you will too!

Cranberry Walnut Bacon Salad

1 pack of Farmer John Applewood Bacon

1 pack of your favorite spring salad

1/2 cup of crumbled Feta cheese

1/2 cup of dried cranberries

1/2 cup of pecans

1 apple, chopped into small squares

1/2 shredded parmesean cheese

Raspberry Vinegarrett salad dressing

Cook the bacon according to the package, remove from pan, place on plate with paper towels to absorb excess oil.  Prepare your salad by washing the salad and put it in a bowl. Top it off with the feta chese, pecans, cranberries, parmesean and sliced apples. Once the bacon is cooled, chop the bacon into small pieces, add then to your salad (and not straight into your mouth!) and finish the salad by drizzling on the dressing.

If you have any leftovers, good for you.  Sadly, though, I won’t be able to guarantee that you’ll have some left. My whole family loves this salad and even the kids ask for it.
