I can’t believe it’s not Butter Breakfast Scramble #MakeMoreOfMealtime

When the kids are at school, breakfast is one special time of the day for me. My oldest isn’t out of his room yet, so this is honestly the only time I have to myself. It may not be a shopping spree or a day at the spa, but this alone time with my cup of coffee, my quiet time prayers, and a plate or morning glory is the perfect way for me to start my day. I may not leave the home for work, but as I being to work at my blogs, starting social shares and making sure things are in order, I feel satisfied and ready to take on the day. I love that feeling, don’t you? Still, even when the kids are home, making breakfast together is just as special. Plus, making memories with my kids in the kitchen, creates unforgettable moments.
I re-created this recipe yesterday. See, I’ve made scrambled eggs many, many times, but I’ve never made it with butter. I usually use a cooking spray and plop the egg down on the pan, serve and eat.
This recipe called for adding a tablespoon of the famous I can’t believe it’s not Butter spread to beat along with my eggs and let me tell you. THEY WERE THE BEST EGGS, EVER! Talk about fluffy, flavorful eggs.
I can’t believe it’s not Butter Breakfast Scramble
Recipe serves: 2
Prep Time: 3 min
Cook Time: 2 min
2 Tbsp. I Can’t Believe It’s Not Butter!® Spread, divided
4 cage-free eggs
2 slices whole wheat bread
Beat 1 Tbsp. I Can’t Believe It’s Not Butter!® Spread and eggs with fork or in medium bowl about 2 minutes (small lumps of Spread will remain in egg mixture). Heat remaining Tbsp. spread in nonstick skillet over medium heat until melted. Add egg mixture to skillet and cook over low heat, stirring frequently, until eggs are thoroughly cooked, about 2 minutes. Add salt and pepper to taste.
Serve immediately with your toast and enjoy!
